Takashi Kinoshita, the most Burgundian of Japanese chefs

Educated in the art of taste and excellence in Japan, and adopted by the terroirs of France since his arrival in the country, Takashi Kinoshita has honed his talent with some of the finest names in French gastronomy including Jean-Pierre Billoux at the Pré aux Clercs in Dijon, the kitchens of the Elysée Palace, and the brigade of Robert Bardot, Meilleur Ouvrier de France in Vaison-la-Romaine.

Listed as a young talent in Gault & Millau in 2017, awarded a Michelin star at Château de Courban in 2018, a member of several Burgundy guilds and a true ambassador for his adopted region, Takashi is above all a passionate lover of the Côte d'Or and Burgundy, a land of tastes and colours that opens up to him a whole world of possibilities.

From his native Japan, he brings a fresh eye to bear on French culinary traditions and their century-old history, and has shown himself capable of working with our rich cultural heritage like no other. He uses his vision and masterful technique to create a fresh interpretation of French cuisine, free from habit or routine, and that is light and easy to digest.
