The meats are simmered and slow-cooked in a savoury wine sauce that envelops them in a delectable, rich coating. With the beef cheek confit, the knife becomes a mere accessory, such is the tenderness of the meat, while the roast poultry and potato mousseline will propel you back to erstwhile family Sunday lunches.
